Healthy Enchilada Recipe

Healthy Enchilada Sauce:
- 1/3 c. avocado oil
- 4 cloves garlic
- 3 Tbsp. chili powder
- 8 Tbsp. water
- 2 c. homemade tomato sauce (or canned organic)
- ½ tsp. arrowroot starch
- 1 tsp. sea salt
Mix chili powder and water in a small bowl and stir until blended well, then set aside.
In a saucepan, sautee garlic in avocado oil over medium low heat (1-2 minutes). Turn off heat and wait 1 minute. Carefully and slowly add chili powder mix. Turn burner back on to medium low and continue stirring until combined. Remove from burner and stir in tomato sauce and salt. Mix well until everything is combined well.
- 8 organic corn tortillas
- 1-2 cooked and shredded chicken breasts (or substitute with 1 lb. cooked organic ground beef)
- Healthy Enchilada sauce (recipe above)
- 1 tsp. avocado oil
- 1 cup cheddar and/or Monterey Jack cheese (optional)
- Garnish: Chopped cilantro, chopped tomatoes, chopped onion, plain Greek yogurt (instead of sour cream)
Preheat oven to 350 degrees. Oil your baking dish with the avocado oil. Dip each corn tortilla in the enchilada sauce and let sit for about 10 minutes. Take one sauce-covered tortilla, fill with chicken and then roll and place in your baking dish. Repeat this for all 8 tortillas placing them in a row in baking dish. Spread the remainder of sauce over row of enchiladas. If using cheese, spread cheese over enchiladas. Bake uncovered for 15 minutes or until warmed through. Garnish each enchilada with chopped tomatoes, green onion, cilantro, and a dollop of plain Greek yogurt.
Serve with fresh green salad and sliced avocados.

Hi, my name is Dr. Denise Dvorquez. I’m the newest internist at the Hemet location for Rancho family medical group. My approach to health is very holistic. I work with patients on their diet and exercise goals to help reduce medications when possible and improve their quality of life.
Some things that I enjoy doing that help keep me active are riding bikes with my son, going to the park, and anything to do with the great outdoors. I try to incorporate as many physical activities as I can in our day to day lives. I’m very excited to be a part of Rancho family medical group to help serve the hemet community. I look forward to seeing you in clinic soon.
