Grilled Coconut-Curry Chicken
Grilled Coconut-Curry Chicken Recipe
8 leaves from 1 medium head of butter lettuce, such as Boston or Bibb
6 slices turkey bacon (about 6 ounces)
2 tablespoons plain greek yogurt
1 tablespoon finely chopped chives
1 tablespoon freshly squeezed lemon juice
1/8 teaspoon freshly ground black pepper
1 pint cherry or grape tomatoes, halved
1 medium avocado, diced
Preheat an oven to 400F, and line a baking sheet with either aluminum foil or parchment paper.
Lay bacon on the baking sheet, place in oven, and bake for 15-20min or until bacon is golden brown. Remove from oven and let it cool.
While bacon is cooking, in a small bowl stir together the greek yogurt, chives, lemon juice, and pepper. Set aside. Dice the avocado and place that aside as well.
Once bacon is cool, transfer it to a cutting board and roughly chop it, then assemble lettuce wraps! Fill lettuce leaf with tomatoes, avocado, and bacon, then serve with dressing. Enjoy!

Dr. Behnawa received her Bachelor’s degree at UCSD. She completed her Family Medicine Residency as well as her Geriatrician fellowship at University of California, Irvine.
Dr. Behnawa enjoys Geriatric Medicine as well as preventative medicine. She believes simple lifestyle changes can go a long way in keeping patients healthy and out of the clinic, and always promotes healthy eating and exercise habits.

Hi, my name is Dr. Denise Dvorquez. I’m the newest internist at the Hemet location for Rancho family medical group. My approach to health is very holistic. I work with patients on their diet and exercise goals to help reduce medications when possible and improve their quality of life.
Some things that I enjoy doing that help keep me active are riding bikes with my son, going to the park, and anything to do with the great outdoors. I try to incorporate as many physical activities as I can in our day to day lives. I’m very excited to be a part of Rancho family medical group to help serve the hemet community.
